Ingredients

  • 8 oz cooked salmon (fresh or canned), flaked
  • 1/4 cup heavy cream
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh dill, chopped, plus more for garnish
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 envelope (about 1 tablespoon) unflavored gelatin
  • 1/4 cup cold water
Note: For a smoother texture, ensure the salmon is thoroughly deboned and skinned.

Instructions

  1. In a small bowl, sprinkle the gelatin over cold water and let it stand for 5 minutes to soften.
  2. Gently warm the mixture over low heat, stirring until the gelatin has dissolved. Remove from heat and allow to cool slightly.
  3. In a food processor, combine the flaked salmon, heavy cream, cream cheese, lemon juice, lemon zest, dill, salt, and white pepper. Blend until smooth.
  4. With the processor running, gradually add the cooled gelatin mixture until fully incorporated.
  5. Pour the mousse into a serving dish or individual molds. Cover and chill in the refrigerator for at least 2 hours, or until set.
  6. Garnish with fresh dill before serving. Serve chilled with crackers, cucumber slices, or as desired.
