Ingredients
- 1 cup (7oz) of white rice
- 4 cups (1 quart) of whole milk
- 1/2 cup (4oz) of sugar
- 1/4 teaspoon of salt
- 1 teaspoon (0.17oz) of vanilla extract
- 1 cinnamon stick
- Peel of 1 lemon (only the green part, avoiding the white to prevent bitterness)
- Ground cinnamon for dusting
Instructions
- Rinse the rice under cold water until the water runs clear. Drain well.
- In a medium saucepan, combine the rice, milk, sugar, salt, cinnamon stick, and lemon peel. Bring to a boil over medium heat, stirring occasionally.
- Reduce heat and simmer, uncovered, for about 45 minutes, or until the rice is tender and the mixture has thickened. Stir frequently to prevent the rice from sticking to the bottom of the pan.
- Remove from heat and discard the cinnamon stick and lemon peel. Stir in the vanilla extract.
- Pour the pudding into individual serving dishes or a large serving dish. Allow to cool to room temperature, then refrigerate for at least 2 hours before serving.
