It maintains its shape during slow cooking, but also produces a very creamy result. This is due to the balance between amylose and amylopectin that the grain has. It is also more difficult to overcook, making it more suitable for beginners. It is the most widely used in Italian cuisine for the preparation of risottos.

Vialone Nano: Preferred for risottos in the Veneto region of Italy. This shorter grain rice is grown in the Veneto region of Italy, being the preferred choice for preparing risottos in this region. It has a high starch content, cooks more quickly than Carnaroli, and yields a very creamy risotto. Vialone Nano is a thicker and shorter grain compared to other types of rice for risotto.
