Ingredients

  • 4 cups of fresh green corn kernels
  • 1 cup of granulated sugar
  • 1/2 cup of unsalted butter, melted
  • 1 cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 3 large eggs
  • 1 cup of whole milk
  • 1 teaspoon of vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  • In a blender, puree the corn kernels with milk until smooth.
  • In a large bowl, mix the melted butter, sugar, and vanilla. Add eggs one at a time, beating well after each addition.
  • Sift together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
